A Santoku of 52100 carbon steel with a 6" cutting edge and an overall length of 11". Scales of olive, padauk and Gabon ebony. Black and white liners and accents, two brass pins and a “Millie”s Signature”mosaic pin.
This blade has been given an acid dip, a head start with the patination process giving the steel a grey and slightly mottled finish and relieving some of the angst of those first few stains.
A great all-purpose knife developed in Japan in the 20th century and made famous by Rachel Ray in the 21st. Preferred by some as a replacement for the traditional western style chef’s knife. And a terrific garlic smasher!
